How Do You Source Ethiopian Specialty Coffee?

Sourcing Ethiopian specialty coffee starts with selecting a region and flavour profile, requesting pre-shipment samples (PSS) from a licensed exporter, cupping on SCA protocol, and confirming the lot with a contract. Direct-trade lots ship in GrainPro-lined jute bags from Djibouti port, with full traceability to the washing station or cooperative of origin.

Three Channels for Sourcing Ethiopian Coffee

Each channel trades volume against traceability and price. Most specialty programmes blend two: direct-trade for flagship lots and ECX for blends.

    Direct Trade

Source from a single washing station or cooperative with full traceability. Higher premiums, smaller lots (5-50 bags), long-term relationships.

Best for: specialty roasters, micro-roasters, single-origin programmes.

    ECX-Traded Lots

Region-traceable coffees graded by the Ethiopian Commodity Exchange. Larger volumes (FCL+), competitive pricing, consistent grades.

Best for: blenders, mid-size roasters, espresso programmes.

    Cup of Excellence

Top-scoring lots from the annual Cup of Excellence Ethiopia auction. 87+ SCA scores, full farm-level traceability, competitive bidding.

Best for: competition lots, premium retail, marketing-driven roasters.

How to Choose the Right Ethiopian Lot

    Define your flavour profile

Floral and tea-like (Yirgacheffe washed), stone-fruit and chocolate (Sidamo), wild berry naturals (Guji), or mocha-spice (Harrar).

    Match altitude to acidity

Higher elevation (1,900-2,200 m) yields denser beans with brighter acidity and more complex aromatics. Lower elevation lots trade complexity for body.

    Verify certifications

Confirm Organic (EU/USDA), Fair Trade, or Rainforest Alliance status if your retail story requires it. Most cooperatives carry stacked certifications.

    Traceability and Quality Verification

Direct-trade lots carry traceability to the washing station, cooperative, or — for Cup of Excellence — the individual farm. Buyers receive:

    • Pre-shipment sample (PSS) — 300g of the exact lot, cupped and approved before contract.
    • SCA cupping score from a Q-Grader, with attribute breakdown for fragrance, flavour, acidity, body, and balance.
    • Defect count per 300g — Grade 1 specialty lots show 0-3 defects.
    • Origin documentation — washing station name, region, woreda, altitude, processing method, and harvest date.
